This fresh strawberry pie is easy to make. Top it off with whipped cream and chocolate shavings for an elegant presentation.
Fresh Strawberry Pie
Crust
1 (9-inch round) baked pie shell, cooledFilling
3 pints (6-cups) fresh strawberries, stemmed
1 cup sugar
3 tablespoons cornstarch
1/2 cup water
4 to 5 drops red food color, optionalTopping
Whipped Cream, optional
Chocolate shavings, optionalDirections
In small bowl, crush enough strawberries to make 1 cup. Combine sugar and cornstarch in medium saucepan; add crushed strawberries and water. Cook over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat; stir in food color if desired. Cool.Arrange remaining strawberries point side up, in baked pie shell. Pour cooked strawberry mixture evenly over berries. Refrigerate 3 hours or until set. Serve topped with whipped cream and chocolate shavings if desired. 8 servings.
Variation: Slice strawberries and arrange in baked pie shell, if desired.
