Fresh Strawberry and Whipped Cream Pie

This fresh strawberry pie is easy to make. Top it off with whipped cream and chocolate shavings for an elegant presentation.

Fresh Strawberry Pie

Crust
1 (9-inch round) baked pie shell, cooled

Filling
3 pints (6-cups) fresh strawberries, stemmed
1 cup sugar
3 tablespoons cornstarch
1/2 cup water
4 to 5 drops red food color, optional

Topping
Whipped Cream, optional
Chocolate shavings, optional

Directions
In small bowl, crush enough strawberries to make 1 cup. Combine sugar and cornstarch in medium saucepan; add crushed strawberries and water. Cook over medium heat, stirring constantly, until mixture boils and thickens. Remove from heat; stir in food color if desired. Cool.

Arrange remaining strawberries point side up, in baked pie shell. Pour cooked strawberry mixture evenly over berries. Refrigerate 3 hours or until set. Serve topped with whipped cream and chocolate shavings if desired. 8 servings.

Variation: Slice strawberries and arrange in baked pie shell, if desired.
