Chicken Penne in Creole Cream Sauce

Ingredients
1 (1-pound) package Penne pasta
1 tablespoon olive oil
4 boneless, skinless, chicken breasts (about 1 pound), cut into 1-inch pieces
1/2 cup diced smoked sausage, kielbasa
2 cloves garlic, chopped
1 teaspoon creole or cajun seasoning blend
1 dash hot pepper sauce, to taste
1 cup whipping cream
1/2 pound shrimp, peeled and deveined
1/3 cup fresh grated Parmesan cheese
1/3 cup chopped green onions

Directions
Cook Penne as directed on package. Drain.

Meanwhile, heat oil in large skillet over medium-high heat until hot. Add chicken, cook 4 to 5 minutes, stirring occasionally, until chicken turns white. Stir in sausage, garlic, creole seasoning, and hot pepper sauce. Cook 1 minute. Stir in cream. Reduce heat to low; cook 5 minutes, stirring frequently, until thoroughly heated.

Stir in shrimp, cheese, and green onions. Add cooked Penne; toss to coat. Cook 1 minutes, stirring constantly, until pasta is heated through, and shrimp turns pink. Transfer mixture to a large serving platter. Garnish with additional chopped green onions and grated Parmesan, if desired. Serves 4.

TIP: Fettuccine may be substituted for Penne pasta.
