Quick and Easy Lemon Jello Cake
This cake is topped with a tart and sweet lemon glaze that saturates the finished cake. Quick and easy to make with the use of a cake mix and a box of lemon jell-o.

1 (4-serving size) box lemon jello
1 (18.25-ounce) box white cake mix
4 eggs
1-1/4 cups water
1/4 cup oilGlaze
2 cups powdered sugar
2 teaspoons grated lemon peel
3 to 4 tablespoons fresh lemon juiceDirections
Preheat oven to 350°F. Lightly grease 13×9-inch cake pan.Combine cake ingredients in large bowl; beat for 2 minutes. Pour batter into prepared pan. Bake at 350°F. for 45 minutes, or until cake springs back when lightly touched.
Meanwhile, place powdered sugar and lemon peel in a small bowl; stir in enough lemon juice to make a thin glaze consistency. While cake is hot, prick all over with fork. Pour glaze evenly over hot cake. Cool. Cut into squares. Garnish with whipped cream if desired.
