Spicy Shrimp Penne with Roasted Red Pepper Citrus Sauce

Pasta and seasoned shrimp tossed together in a light and lively citrus, ginger cream sauce. This was my prize winning recipe for ‘Florida’s Natural Premium Brand Juices Citrus Recipe Contest.’

Spicy Shrimp Penne with Roasted Red Pepper Citrus Sauce

Ingredients
1 package (12-ounces) penne pasta
2 tablespoons olive oil, divided
1 pound fresh large shrimp, shelled and deveined
1/4 teaspoon crushed red pepper flakes
4 cloves garlic, minced
3 shallots, chopped
1 jar (7-ounces) roasted red peppers, drained and coarse chopped
2 cups Orange Juice
1 tablespoon fresh grated ginger
1/2 teaspoon salt or to taste
1/4 teaspoon pepper, or to taste
1/3 cup chopped green onions
1/3 cup heavy cream

Directions
Cook according to package directions until al dente. Drain.

Meanwhile, in a medium bowl, stir together shrimp, 1 tablespoon oil, and crushed red pepper flakes. Set aside.

Heat remaining 1 tablespoon oil in a large skillet over medium heat. Add garlic, shallots and roasted red peppers. Cook for 2 minutes stirring often. Add orange juice, ginger, salt and pepper. Simmer for 10 minutes or until juice is reduced by half. Add seasoned shrimp and green onions. Continue cooking for about 4 minutes or until shrimp is pink, cooked. Stir in cream and heat through. Serve over hot cooked pasta. Garnish with additional chopped green onions and orange slices if desired. Serves 4.
