Fresh strawberries, and melon marinated in a lightly sweetened mint syrup. Serve as a salad, or thread onto skewers to make fruit kabobs.
Marinated Strawberry Melon Salad
Mint Syrup
3/4 cup sugar
2 cups water
1/3 cup fresh mint leaves
2 tablespoons lemon juiceFruit Salad
1 pint fresh strawberries, halved
1 cup honeydew melon, balls or cubes
1 cup cantaloupe, balls or cubes
1 cup seedless grapesDirections
Combine sugar, water and mint leaves in medium saucepan; bring to a boil. Remove from heat; stir in lemon juice. Cool; strain and reserve liquid.Place fruit in a large bowl; pour mint liquid over fruit. Cover and refrigerate several hours, stirring occasionally. Drain liquid from fruit before serving.
Variation: To serve as an appetizer, leave strawberries whole. Marinate fruit as directed in recipe; arrange fruit on 6-inch wooden skewers.
