Penne with Sun Dried Tomato Pesto
A quick to make side dish. Sun-dried tomatoes, fresh basil and Parmesan cheese tossed together with hot cooked pasta.
Penne with Sun-Dried Tomato Pesto
Ingredients
1 (12-ounce) package uncooked penne pasta
1 (8.5-ounce) jar sun-dried tomatoes packed in olive oil
2 cloves garlic
1/8 teaspoon red pepper flakes
1 cup fresh basil leaves
1/2 cup fresh grated Parmesan cheese
salt and pepper to tasteDirections
Cook pasta according to package directions; drain, reserving 1 cup pasta water.Meanwhile, combine sun-dried tomatoes with the oil, garlic, pepper flakes, and basil in a food processor, or blender with metal blade. Process on high speed until tomatoes are finely chopped. Transfer mixture to a large bowl; stir in cheese. Add pasta and toss to coat. If mixture is dry, add a little reserved pasta water to moisten; blend well. Season to taste with salt and pepper. Garnish with fresh basil leaves. 4 servings.
