Quick & Easy: Cod Fillets with Green Chile Salsa
These quick and easy to make cod fillets are drizzled with lime juice and topped with salsa verde. Dinner ready in minutes!
Broiled Cod with Green Chile Salsa
Ingredients
1-1/2 pounds fresh or frozen cod, or haddock fillets
2 tablespoons fresh lime juice
1/4 teaspoon pepper
1/2 cup green chile salsa
2 tablespoons fresh chopped cilantro leaves, if desiredDirections
Spray broiler pan with nonstick cooking spray. Cut fish into 6 serving-sized pieces; place on prepared broiler pan. Brush with lime juice; season with pepper. Broil 4 to 6-inches from heat source for 6 to 8 minutes, or until fish flakes easily with fork. Top fish with green chile salsa. Broil an additional 1 to 2 minutes or until salsa is hot. Garnish with cilantro. 6 servings.Serving Suggestion: Serve with fresh sliced tomatoes and hot cooked rice.
