A light flavored banana pancake served hot off the griddle with an easy to prepare Honey Butter.
Banana Pancakes with Honey Butter
Honey Butter
1/2 cup butter
1/4 cup honeyPancake
1/2 cup water
1/2 cup mashed bananas
1 tablespoon oil
1 egg
1 cup pancake mixDirections
Combine butter and honey in small bowl; beat until light and fluffy. Set aside.Heat large skillet or griddle to 375°F. Grease lightly with oil.
In large bowl, stir together water, mashed bananas, oil, and egg. Add pancake mix; stir until large lumps disappear. For each pancake, pour about 1/4 cup batter onto hot skillet. Bake until bubbles form and edges start to dry; flip pancake and bake an additional 1-1/2 to 2 minutes. Serve with prepared Honey Butter. Makes about 12 (4-inch round) pancakes.
