This is how I prepare taco salad. It’s my go to plan when I need dinner in a hurry. Adjust the amounts and toppings to suit your needs and tastes.
Black Bean Taco Salad
1 pound lean ground beef
1 (1.5-ounce) pkg. taco seasoning mix
8 cups Salad Greens
1 (15-ounce) can black beans, drained and rinsed
1 (7-ounce) pkg. tortilla chips, crushed
Optional toppings: shredded cheddar cheese, salsa, black olives, tomato wedges, sour cream, avocado, and/or salad dressing
Brown ground beef according to Taco Seasoning package directions. Cool.
In large bowl, combine salad greens and black beans; top with meat mixture and toss well to combine. Just before serving add tortilla chips, tossing well to combine with other ingredients. Top with your favorite toppings if desired. 6 to 8 servings.
