Rich and Silky Hot Fudge Sauce

In the mood for chocolate? Hot fudge sauce isn’t just for ice cream, try it on brownies, drizzled on or in pies (Decadent Strawberry Chocolate Pie), drizzle over cakes, or just simply eat it by the spoonful. Which ever way you like it, this simple recipe is sure to satisfy your chocolate craving.  From Delicious Desserts Made Easy with Eagle Brand Sweetened Condensed Milk, Borden Inc., 1981

Hot Fudge Sauce

4 (1-ounce) squares semi-sweet chocolate
2 tablespoons butter or margarine
1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
1 teaspoon vanilla extract
Dash salt

Melt chocolate and butter in heavy saucepan over low heat; stir in remaining ingredients. Cook, stirring constantly, about 5 minutes or until sauce is slightly thickened. Serve warm over ice cream. Refrigerate leftovers.

To Reheat: Combine desired amount of sauce with small amount of water in small sauce pan. Heat over low heat, stirring constantly, until heated through.

Mocha Fudge: Add 1 teaspoon instant coffee to the butter and chocolate, continue as directed in recipe.

Chocolate-Mint: Substitute 1/2 to 1 teaspoon peppermint extract for vanilla.
