Glazed Lemon Bars

A ‘must have’ in the recipe files, classic and always popular. For best results use fresh squeezed lemon juice.

Glazed Lemon Bars

Crust
2 cups flour
1/2 cup powdered sugar
1 cup butter or margarine, softened

Filling
4 eggs, slightly beaten
2 cups sugar
1/4 cup flour
1 teaspoon baking powder
1/4 cup lemon juice

Glaze
1 cup powdered sugar
2 to 3 tablespoons lemon juice

Directions
Heat oven to 350° F.
Combine all crust ingredients in a large bowl; mix together until crumbly. Press mixture evenly in bottom of ungreased 13×9-inch pan. Bake at 350°F. for 20 to 30 minutes or until light golden brown.

For filling, stir together eggs, sugar, 1/4 cup flour and baking powder in large bowl until well combined. Add 1/4 cup lemon juice; blend well. Pour mixture over warm crust. Return to oven and bake 25 to 30 minutes or until top is light golden brown. Cool completely.

To make glaze, put 1 cup powdered sugar in a small bowl; stir in enough lemon juice for desired glaze consistency. Drizzle over cooled bars.

  1. Mmm, they were delicious! Not to mention super easy. The fresh lemon juice definitely adds to the flavor, but either way I’m pretty sure you can’t go wrong.

  2. Thanks Ashley, I’m glad you liked them. And you’re right, through the years I’ve made them with ‘store bought’ lemon juice as well as the ‘fresh squeezed’ and either way they turn out great. I just think the fresh lemon adds more of the lemon flavor I love.
