When you want to have a dinner in a hurry, think of broiling your chicken, it only takes about 12 minutes. Basting your chicken first with this sauce will help seal in the chicken’s natural juices and the hot pepper sauce will add a little more ‘heat.’
Hot Pepper and Herb Chicken
4 boneless, skinless chicken breast halves
1/2 cup mayonnaise
2 tablespoons finely chopped fresh cilantro leaves
1/4 teaspoon hot pepper sauce, to taste
1/8 teaspoon garlic powder
Preheat broiler. Place chicken on broiler pan. Set aside.
Combine remaining ingredients in a small bowl; mix well. Spread about 1 teaspoon mixture on top of each breast. Broil in preheated broiler 4 to 6-inches from heat source, for 5 minutes. Turn chicken over; spread each piece with about 1 teaspoon mayonnaise mixture. Broil 5 minutes, or until no longer pink inside (internal temperature 160°F on meat thermometer). Serve with pasta or salad if desired. 4 servings.
