Farmer’s Market Omelet
4 slices bacon
1 medium green or red bell pepper, seeded and sliced
1/2 cup chopped onion
2 medium cooked potatoes, sliced
8 eggs, beaten
2 tablespoons fresh grated Parmesan cheese
1 tablespoon fresh chopped parsley
1 teaspoon fresh chopped basil
Fry bacon in large skillet until crisp; remove and place on paper towels to drain. Add peppers and onion to pan drippings in skillet; cook, stirring frequently, until crisp-tender. Stir in potatoes.
Stir together eggs, cheese, parsley, and basil; pour over vegetables. Reduce heat to low. Cover and simmer for 20 to 25 minutes or until top is set. Crumble bacon and sprinkle over eggs. Garnish with additional grated Parmesan cheese and chopped parsley, if desired. 4 to 6 servings.
