Stir a Little Yogurt into Your Pancakes

The use of pancake mix makes these pancakes easy to make, the addition of yogurt makes for a nice light flavor.

Easy Yogurt Pancakes

1 cup pancake mix
1/2 cup milk
1 (8-ounce) carton lemon or strawberry yogurt, divided
1 egg

Heat skillet or griddle to 375°F. Combine pancake mix, milk, 1/2 cup yogurt (reserve remaining yogurt for topping) and egg in small bowl. Mix until large lumps disappear. Pour batter onto hot griddle to form pancakes. Flip pancakes when edges look cooked and bubbles begin to break on surface. Serve topped with fresh sliced fruit and reserved yogurt if desired.
