Peanut Butter Cookies

I altered a standard recipe to achieve a ‘light and crisp’ Peanut Butter cookie, in comparison to most peanut butter cookies that are a little more dense. I’m really pleased with the new texture, it’s the only Peanut Butter Cookie recipe I use now.

Peanut Butter Cookies

1 cup shortening
2/3 cup peanut butter
1/4 cup brown sugar
1-3/4 cups sugar
2 egg
1 tsp vanilla
3 cups flour
2 tsp. Soda
1 tsp. Salt
Extra granulated sugar to roll dough in before baking

Cream together shortening, peanut butter, and sugars. Add eggs and vanilla; mix well. Add flour, soda and salt; mix until well blended. Measure about 2 tablespoons dough, and shape into ball; roll balls in sugar to coat. Place on cookie sheet approx. 2-inches apart; press flat with the prongs of a fork to form a ridged surface. Bake at 350°F for 10 to 12 minutes, or until light golden brown. Makes approx. 2 dozen large cookies.
