Quick and Easy Lemon Jello Cake

This cake is topped with a tart and sweet lemon glaze that saturates the finished cake. Quick and easy to make with the use of a cake mix and a box of lemon jell-o.

Lemon Jello Cake

1 (4-serving size) box lemon jello
1 (18.25-ounce) box white cake mix
4 eggs
1-1/4 cups water
1/4 cup oil

2 cups powdered sugar
2 teaspoons grated lemon peel
3 to 4 tablespoons fresh lemon juice

Preheat oven to 350°F. Lightly grease 13×9-inch cake pan.

Combine cake ingredients in large bowl; beat for 2 minutes. Pour batter into prepared pan. Bake at 350°F. for 45 minutes, or until cake springs back when lightly touched.

Meanwhile, place powdered sugar and lemon peel in a small bowl; stir in enough lemon juice to make a thin glaze consistency. While cake is hot, prick all over with fork. Pour glaze evenly over hot cake. Cool. Cut into squares. Garnish with whipped cream if desired.

  1. This cake has been in our family for many,many years, can remember helping my mom make this when I could barely see over the counter top. So glad to find this recipe, Mom has passed on and her recipes did not make it me.
    Super easy and so delicious. Doesn’t matter if you use white or yellow cake mix, will taste just as good.
