A light lemon cookie made easy with lemon flavored cake mix.
Lemon Cake Mix Cookies
1 (18.25 ounce) package Lemon Cake Mix
1 (4-ounce) tub frozen whipped topping, thawed
3 tablespoons oil
sugar to roll cookie dough in before baking
Preheat oven to 350°F.
Combine cake mix, whipped topping, oil and egg in large bowl; mix well. Chill dough 1 hour for easier handling. Shape dough into 1-inch balls; roll in sugar. Place 2 inches apart on lightly greased cookie sheet. Bake at 350°F. for 10 to 12 minutes or until edges are light golden brown. Let stand on cookie sheet for 1 minute before transferring to a wire rack to cool. 3 dozen cookies.
