Oven roasted asparagus spears seasoned with garlic and lemon takes just minutes to prepare.
Oven Roasted Asparagus
2 pounds fresh asparagus spears, trimmed
3 tablespoons extra-virgin olive oil
1-1/2 tablespoons minced garlic
Salt, to taste
Freshly ground black pepper, to taste
2 teaspoons fresh lemon juice
Preheat oven to 425°F.
In a large glass baking dish, toss the asparagus with the olive oil and garlic. Season lightly with salt and pepper, and toss to coat. Bake at 425°F for 15 to 20 minutes, or until the asparagus are tender and lightly browned, stirring twice during cook time.
Remove from the oven. Sprinkle with lemon juice; toss to coat. Serve warm or at room temperature. 8 servings
NOTE: Cook time will vary depending upon the thickness of the asparagus stalks.
