Homemade Tomato Basil Bisque

An easy to prepare tomato soup with a hint of basil. Serve with ham and cheese wraps for a complete and quick meal.

Tomato Basil Bisque

1/4 cup margarine or butter
1/4 cup chopped onion
1/4 cup chopped celery
3 tablespoons flour
1/2 teaspoon salt, to taste
Dash pepper
1-1/2 cups chicken broth
1-1/2 cups milk
1 (28-ounce) can tomato puree
1 tablespoon sugar
1/2 teaspoon dried basil leaves, crushed

Melt margarine in a large saucepan over medium heat. Add onions and celery; cook until tender, stirring frequently. Stir in flour, salt, and pepper. Cook 1 minute stirring constantly, until smooth and bubbly. Stir in chicken broth and milk; cook and stir, until slightly thickened. Stir in tomato puree, sugar, and basil. Cook 5 minutes or until thoroughly heated, stirring often; do not boil. 4 servings.
