One Pot Pasta with Sausage, Mushroom & Tomato

No precooking the pasta, it cooks right up in the sauce. A flavorful meal that’s quick and easy to prepare.

One Pot Pasta

1 tablespoon olive oil
1 medium onion, chopped
1/2 pound bulk Italian sausage
2 (14.5-ounce) cans diced tomatoes, undrained
1 (4.5-ounce) jar sliced mushrooms, undrained
3/4 cup chicken broth
1 tablespoon fresh chopped basil leaves
2 cups (4-ounces ) uncooked penne pasta

Heat oil in large skillet over medium-high heat. Add onion and sausage. Cook 5 minutes, stirring occasionally, or until sausage is no longer pink. Stir in remaining ingredients. Reduce heat to medium-low. Cover and cook 20 to 25 minutes or until pasta is tender. Garnish with grated Parmesan cheese if desired. 4 servings.
