Breakfast Idea: Fresh Apple Pancakes

Serve up smiles with these simple to prepare pancakes made with fresh chopped apples.

Fresh Apple Pancakes

2 cups pancake mix
1-1/2 cups water
1 cup finely chopped, peeled apples

Heat large skillet or electric griddle to 375°F. Lightly grease with oil.

Combine pancake mix and water in large bowl; mix just until large lumps disappear. Fold in chopped apples. For each pancake, pour about 1/4 cup batter onto hot skillet. Flip pancakes when edges look cooked and bubbles begin to break on surface. Continue cooking for 1-1/2 to 2 minutes. Serve topped with a sprinkle of cinnamon and sugar if desired. Makes about 12 (4-inch) pancakes.
