Fresh green beans lightly coated in olive oil and roasted in the oven. Serve hot out of the oven, or cold as an appetizer.
Oven Roasted Green Beans
1 pound fresh green beans, trimmed
1-1/2 tablespoons olive oil
1 teaspoon fresh lemon juice
salt and pepper to taste
Heat oven to 500°F. Arrange green beans on a large cookie sheet; drizzle with olive oil, turning beans to coat. Bake at 500°F. for 6 to 8 minutes or until tender, stirring twice during cook time. Transfer beans to serving dish; drizzle with lemon juice. Season with salt and pepper to taste. Serve hot or cold.
