A colorful, crunchy and refreshing salad with a lightly spiced cilantro lime vinaigrette.
Pico de Gallo Citrus Salad
3 tablespoons oil
2 tablespoons lime juice
1 teaspoon sugar
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
2 tablespoons chopped fresh cilantro
2 oranges, peeled and sliced crosswise into rounds
1/2 cucumber, thinly sliced
1 small red or yellow bell pepper , seeded and cut into strips
1/2 medium jicama, peeled and cut into sticks
1/8 teaspoon chili powder
Place all vinaigrette ingredients in a blender container; blend until smooth.
Alternate orange and cucumber slices around outer edge of serving platter. Mound bell pepper and jicama strips in center. Drizzle with vinaigrette; sprinkle with chili powder. Garnish with fresh cilantro sprigs if desired. 6 servings.
