Simple Two-Bean Chicken Salad

A colorful quick and easy to prepare salad with fresh green beans, garbanzo beens, ripe tomato and chicken strips.

Two-Bean Chicken Salad

1/2 pound fresh green beans, trimmed
4 cups water
1 (15-ounce) can garbanzo beans, drained
2 cups cooked chicken strips
1 medium ripe tomato, seeded, coarse chopped
2/3 cup purchased Italian dressing

Cut green beans diagonally into thirds. Bring water to a boil in a medium saucepan. Add green beans; return to a boil. Boil 3 minutes. Drain; immediately plunge into ice water to chill. Drain thoroughly.

Combine blanched green beans, garbanzo beans, chicken and tomato in a large bowl. Add dressing; toss lightly to coat. Serve immediately or refrigerate until ready to serve. 4 servings.
