Gorgonzola, Chicken, and Caramelized Pears with a splash of Grand Marnier.Sound difficult? It’s not.The use of convenience products with the combination of some ‘light’ cooking makes this recipe quick and easy to prepare with that great ‘homemade’ taste. I created this recipe for the ‘Cook Like a Californian Recipe Contest’ and was honored when I was informed that it won the Grand Prize. If you’re looking for a chicken recipe with a little ‘flair’ try this out tonight.
Gorgonzola Chicken and Caramelized Pear Salad
Caramelized Pears
1 tablespoon butter
2 ripe-firm Bartlett Pears, cored and sliced into wedges
Dash salt
Dash pepper
2 tablespoons Grand Marnier
Gorgonzola Dressing
4-oz. Gorgonzola cheese, crumbled
½ cup mayonnaise
2 teaspoons lemon juice
1 clove garlic, minced
1/8 teaspoon cayenne pepper
1/8 teaspoon ground black pepper
Chicken
1 pound Foster Farms Fast Favorites® Grilled Chicken Breast Strips, refrigerated
Salad
1 package (5-oz) spring mix salad greens
1/4 cup bottled Raspberry vinaigrette
1/2 cup walnut halves
½ cup fresh raspberries, garnish
Directions
Heat butter in a large skillet over medium heat until melted. Add pears and season with salt and pepper to taste. Cook pears 8-minutes or until golden and caramelized. Add Grand Marnier and heat through.Remove from heat and cool.
Meanwhile, combine all dressing ingredients in a medium bowl.Reserve ½ cup dressing. Add cold cooked chicken strips to remaining dressing and toss well to coat.
To assemble salad, toss greens with vinaigrette. Transfer greens to a serving platter or individual serving plates. Top with caramelized pears, and Gorgonzola chicken. Sprinkle with walnuts. Garnish with fresh raspberries if desired. Pass with reserved Gorgonzola Dressing. Serves 4.
